INGREDIENTS FOR SPÄTZLE
- 250 g all-purpose flour
- 250 g eggs (5 eggs)
- pinch of ground nutmeg
- pinch of pepper
- pinch of salt and salt for salting water
INGREDIENTS FOR FINISHING
- 200 g Bergkäse, Emmental or Raclette cheese
- 40 g butter
- 80 g peeled onion
- fresh chives for garnish
WINE PAIRING 1
- You will appreciate spätzle most in combination with light, fresh wines. You can choose sparkling, white, or rosé.
SPÄTZLE PROCEDURE
- 1Bring water to a boil, generously salting it (2 tablespoons of salt per 4 liters of water).
- 2In a stand mixer bowl, mix all ingredients with a mixing paddle until a smooth, pliable dough forms.
- 3Press the dough in batches through a spätzle maker into the boiling water and cook each batch for 2 minutes.
- 4Remove the spätzle from the water with a slotted spoon and transfer to a bowl.
FINISHING PROCEDURE
- 1Finely chop the onion, coarsely grate the cheese.
- 2Heat butter in a pan over high heat and sauté the onion until golden.
- 3Add the spätzle and sauté, stirring occasionally, until golden. Remove from heat.
- 4Stir in the grated cheese, add chopped chives, and serve immediately.
Tip
For preparing spätzle, you will need a hand spätzle maker.
For frying, you will need a large non-stick pan.
