INGREDIENTS
- 400 g cooked wheat noodles
- 400 g skinless chicken breasts
- 230 g red bell pepper
- 150 g carrots
- 130 g Napa cabbage
- 110 g mushrooms
- 100 g green bell pepper noisy
- 50 g celery stalks
- 40 g leek
- 40 g unsalted peanuts
- 30 g fresh ginger
- 20 g vegetable oil
- 10 g garlic
- 4 tablespoons oyster sauce
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce noisy
- 1 tablespoon sesame oil noisy
- ½ teaspoon turmeric
- 1 handful coriander leaves
- freshly ground pepper
INSTRUCTIONS
- 1Clean the carrots, cut them lengthwise and slice them diagonally into thin pieces. Remove seeds from the bell peppers and cut the flesh into 0.5 cm thick strips. Cut the leek lengthwise and slice it into 0.5 cm thick strips. Peel and finely chop the ginger and garlic.
- 2Cut off the mushroom stems and slice the caps into 1 cm thick pieces. Cut the cabbage into 1 cm thick strips. Cut the meat lengthwise into 2 slices and then into 1 x 6 cm strips. Clean the celery stalks and slice them diagonally into 0.5 cm thick pieces.
- 3Place the peanuts in a small heated pan and roast them over medium heat, stirring constantly, for 4 minutes until golden brown. Let cool and roughly chop.
- 4Heat both oils vigorously in a pan. Add ginger, garlic and stir for ½ minute. Be careful not to burn the garlic! Add the chicken, season with pepper and sauté for 2 minutes, stirring occasionally. Add turmeric, stir, then add carrots, mushrooms, celery stalks and leek. Sauté for 2 minutes. Add bell peppers and sauté for another 1 minute, stirring frequently.
- 5Add oyster, fish and soy sauce, mix well and pour in 2 tablespoons of water. Sauté for another 1 minute.
- 6Stir and spread the noodles evenly across the pan with your hand. Stir and add the cabbage. Mix thoroughly, remove from heat and stir for another 1 minute. Stir in the coriander leaves. Serve sprinkled with roasted peanuts.
Tip
For preparation, you will need a wide non-stick pan, preferably with a diameter of 32 cm.
