- 1 spring onion (white part)
- 1 tablespoon finely chopped dill
- 5 tablespoons olive oil
- 1-2 tablespoons lemon juice
- grated zest from ½ lemon
DISH PAIRING WITH BEER
- This dish is best enjoyed with a glass of well-chilled beer.
SIDE DISH
- potatoes
MEAT PREPARATION
- 1Finely chop the garlic and onion.
- 2Crumble the cheese roughly by hand and set aside. Cut the chili pepper lengthwise, remove the seeds, and finely chop the flesh. Finely chop the olives.
- 3Except for the cheese, mix all ingredients together in a bowl and refrigerate for 20 minutes. Then divide the seasoned meat into 8 portions and form each into a flat patty.
- 4Place the crumbled cheese on 4 patties and cover them with the remaining patties. Press the edges together and shape the meat into a patty.
- 5Heat oil in a pan over low heat and fry the meat until golden brown on both sides.
SALSA PREPARATION
- 1Peel the cucumber, cut it lengthwise, and scoop out the seeds with a spoon, discarding them. Dice the flesh into 0.5cm cubes.
- 2Finely chop the spring onion. Cut the chili pepper lengthwise, remove the seeds, and finely chop the flesh. Finely chop the olives.
- 3Mix all ingredients in a bowl, season with salt and pepper to taste, and refrigerate for 1 - 2 hours to let the flavors meld.
Tip
You can roughly blend the olives, spring onion, chili pepper, a tablespoon of lemon juice, olive oil, and a pinch of salt and pepper with an immersion blender, then mix with the diced cucumber, dill, and lemon zest. Season the salsa with a few drops of lemon juice, or salt if needed.
To taste, you can use less chili pepper, or omit it entirely.
