INGREDIENTS

  • 600 g ground beef neck
  • 4 buns (kaiser rolls)
  • 4 eggs
  • 120 g tomatoes
  • 70 g sliced bacon
  • 6 teaspoons butter
  • 4 slices Gouda type cheese
  • 8 tablespoons BBQ sauce
  • 60 g pickled onions
  • 2 pinches sweet paprika
  • ground pepper
  • salt

  • For beef, choose a full-bodied, dry, red wine with pronounced tannins.

INSTRUCTIONS

    Slice the tomatoes into 12 pieces. Slice the onions into rings. Cut the buns lengthwise and toast them cut-side down in a moderately hot pan until golden brown.

    Place the bacon slices on a dry pan heated over medium heat, season with pepper and sprinkle with sweet paprika. Once golden brown on the bottom, flip them. Once golden brown on the other side, set them aside on a plate.

    Form the meat into 4 patties the size of the buns and season them with salt and pepper on both sides. Place them in the pan with the leftover bacon fat and cook for 3 minutes over low heat. Then flip them and place 1 teaspoon of butter on each. Cook for another 2 minutes.

    Place 1 slice of cheese on each meat patty and cook for another 1 minute. Set the cooked meat aside.

    Melt the remaining butter in the pan over medium heat and crack the eggs into it. Let the egg white set, the yolk must remain runny.

    Spread 1 tablespoon of BBQ sauce on each half of the toasted bun. On the bottom half of each bun, place 3 slices of tomato, then the meat with cheese, some onion, cooked bacon, and 1 fried egg. Cover with the top half of the bun.
