SUROVINY NA MASO A SPOLEČNÉ

  • 4 porce vepřové panenky po 150g (průměr 5cm)
  • 90g plátků pancetty
  • 3 snítky tymiánu (2 na maso, 1 na čočku)
  • pepř (na maso i čočku)
  • sůl (na maso i čočku)

SUROVINY NA ČOČKU

  • 200g zelené čočky
  • 65g očištěné mrkve
  • 40g šalotky
  • 2 stroužky česneku
  • 1 bobkový list
  • 2 lžíce červeného vinného octa
  • 4 lžíce olivového oleje
  • 1 lžíce najemno nakrájené bazalky
  • 1 lžíce najemno nakrájené pažitky Prozradit
  • 1 lžíce najemno nakrájené plocholisté petržele
  • lístky z 1 stvolu řapíkatého celeru

SNOUBENÍ POKRMU S VÍNEM

  • Vepřové maso si nejlépe vychutnáte s plnějším bílým vínem.

INSTRUCTIONS FOR LENTILS

    Rinse the lentils in cold water, place them in a saucepan, add carrots, garlic, shallots, thyme, bay leaf, and celery stalks, cover with water, and cook until the lentils are al dente, approximately 18 minutes. Drain the contents of the saucepan and discard the thyme, bay leaf, and celery stalks. Dice the carrots, garlic, and shallots into 0.5cm cubes.

    Mix the diced vegetables with the lentils, add wine vinegar, olive oil, chopped basil, chives, and parsley, and mix well. Season with salt and pepper to taste.

INSTRUCTIONS FOR MEAT

    Preheat the oven to 190 °C.

    On a cutting board, overlap ¼ slices of pancetta, season them with pepper and sprinkle with thyme leaves. Place 1 portion of meat on the pancetta and wrap it carefully. Prepare the remaining 3 portions of meat in the same way.

    Sear the meat dry in a hot pan on all sides until golden brown. Start with the side where the bacon joins. Then place it on a baking sheet and put it in the preheated oven for 8 minutes.

    Let the cooked meat rest for 4 minutes, then slice it, season with salt and pepper.
     
     
     
     
Tip
For preparation, you will need a non-stick pan. For baking, you will need a baking sheet.
