Cut the dragon fruit lengthwise and scoop out the flesh with a spoon. Blend it with coconut water, maple syrup, and mint leaves until smooth.

Fill popsicle molds halfway, add smaller pieces of crushed freeze-dried fruit, add the rest of the mixture, and sprinkle with freeze-dried fruit again.

Place in the freezer for 5-6 hours, preferably overnight.
