INGREDIENTS
- 500 g peas (fresh or frozen)
- 1 onion
- 1 leek (white part only)
- 1 cm fresh ginger
- 600 ml vegetable broth
- 1 teaspoon salt
- 1 tablespoon oil
- Radish microgreens
- Almonds for serving
INSTRUCTIONS
- 1Chop the onion finely, and slice the leek into rounds. Peel the ginger and chop it finely as well. Sauté the vegetables in a tablespoon of oil until translucent. Add the peas and broth, and cook for 10 minutes over low heat.
- 2Transfer the soup to a blender and blend until smooth. Season with salt.
- 3Serve with microgreens and sprinkle with small pieces of nuts.
