Preparation method
Finely grate the Cheddar and mix it with all remaining ingredients. Knead into a dough, from which roll out a cylinder with a diameter of 3.5 cm. Wrap it in cling film and place it in the freezer for 30 minutes.
Cut the chilled dough into slices about 0.5 cm thick. Place them with small gaps between them on a baking sheet lined with baking paper. You can create decorative cross-hatching on the biscuits with the tines of a fork. Bake for 15 minutes in an oven preheated to 160°C with fan assist. After baking, let them cool on the baking sheet.
Chef's tip
They are best a few days old. In an airtight container, they will last at least 14 days, but we've never actually managed to test that :-).
