CHEESECAKE AND CARAMEL
- 125 g cream cheese – cream cheese
- 190 ml whipping cream (100 ml for the cream, 90 ml for the caramel)
- 100 g wholemeal or butter biscuits
- 40 g fresh goat cheese
- 30 g powdered sugar
- 55 g butter (30 g for biscuits, 25 g for caramel)
OTHER INGREDIENTS FOR CARAMEL
- 45 g cane sugar
- ½ teaspoon coarse sea salt
METHOD
- 1Grind or crush the biscuits with a rolling pin into small pieces. Melt the butter and mix it with the biscuits.
- 2All ingredients for the cream must be chilled. Whip the fresh goat cheese together with the cream cheese and sifted powdered sugar until foamy (approx. 2 minutes), pour in the cream and whip until the cream thickens (again, approx. 2 minutes for me). If you don't like goat cheese, you can omit it and add more cream cheese.
METHOD FOR Salted Caramel
- 1Melt the butter in a saucepan with a thick bottom over low heat. Add the sugar and dissolve it for approximately 3 minutes, stirring occasionally. Pour in the cream and, stirring constantly over low heat, cook until the caramel begins to thicken and partially reduces. Finally, stir the salt into the caramel.
METHOD for Filling Glasses
- 1Spoon a heaped tablespoon of biscuits onto the bottom and lightly press them down, then top with a spoonful of cream and caramel. Repeat everything once more. Chill the cheesecake in the refrigerator for at least an hour. Before serving, decorate it with rose petals.
Tip
For preparation, you will need 2 glasses of approx. 180 ml and
rose petals.
