INGREDIENTS
- 1 hard-boiled egg
- 170 g tofu
- 60 g pickled cucumbers 170 g tofu
- 60 g mayonnaise
- 30 g spring onion
- 20 g Dijon mustard
- 20 g capers
- 1 clove garlic
- 1 tablespoon roughly chopped basil
- 1 tablespoon roughly chopped flat-leaf parsley
- 1 tablespoon olive oil
- 1 teaspoon finely chopped coriander 1 tablespoon olive oil
- juice of ½ lemon
- pinch of pepper 1 teaspoon finely chopped coriander 1 tablespoon olive oil
- pinch of salt juice of ½ lemon
INSTRUCTIONS
- 1Roughly chop the capers, finely chop the pickles, spring onion, and eggs.
- 2Cut the garlic lengthwise, remove the central germ and discard it. Finely chop the garlic.
- 3Mix all ingredients except tofu together in a bowl.
- 4Crumble or mash the tofu with a fork and mix it into the salad. Add more salt to taste if needed.
