INGREDIENTS

  • 1 kg sushi rice
  • 100 ml rice vinegar
  • 40 g sugar
  • 20 g salt

    Pour the rice into a large pot and add cold water. Thoroughly rub it with your fingers, pour out the water, and add new water. Repeat this process until the water is clear, at least five times.

    Place the rinsed rice into a saucepan, add 1.25 l of water, cover with a lid, and bring to a boil. Reduce heat to minimum and cook for approximately 25 minutes until al dente. Remove from heat and let it rest covered for 10 minutes.

    In a small saucepan, combine rice vinegar, sugar, and salt. Heat until the sugar and salt dissolve. Do not boil! Let the prepared dressing cool down.

    Transfer the cooked hot rice into a bowl, pour in the cooled dressing, and carefully mix it into the rice with a wooden spoon, making sure not to break the individual grains. While mixing, fan the rice to cool it down faster.
