Ingredients

  • 1 kg potatoes (cooking type C)
  • 2 tablespoons olive oil
  • 1 tablespoon dried garlic
  • 1 tablespoon salt
  • ½ tablespoon ground black pepper
  • 1 tub sour cream
  • 1 clove garlic

Instructions

    Boil the potatoes in their skins until semi-soft. Once cooled, peel them and grate finely onto a pastry board or into a large bowl. Add starch, flour, eggs, 1 teaspoon of salt, and quickly mix with a wooden spoon or by hand to form a soft but compact dough.

    On a floured table or pastry board, roll the dough into a log and divide it into equally sized pieces. From these, shape pancakes with your hands, about 8 cm in diameter and 6 mm thick.

    In a pan over medium heat, melt the lard and fry the pancakes on both sides until golden brown.
