INGREDIENTS

  • 500 g wheat all-purpose flour
  • 20 g vegetable oil
  • 15 g fresh yeast
  • 5 g granulated sugar
  • 10 g salt mountain

INSTRUCTIONS

    Pour 225 g of lukewarm water into the stand mixer bowl and add the other ingredients. Mix and slowly knead for 10 minutes until smooth. Turn the prepared dough onto a lightly floured surface, divide into 2 parts, and form into balls. Lightly dust them with flour, cover with a clean cloth to prevent drying, and let rest for 30–45 minutes.

    After resting, roll out the balls with a rolling pin into an oval shape. Turn the oval with the longer side towards you, fold the dough, press down, and roll into a cylinder. Tuck the ends of the cylinder inwards with your finger. Shape into an even cylinder with your hands. Place the cylinders on a baking sheet and let rise for 40 minutes.

    Preheat the oven to 230 °C. Spray water into the oven with a mister until a cloud of steam forms. Then immediately place the baking sheet with the vekas into it and close the oven.

    Reduce the temperature to 200 °C and bake for 16 to 18 minutes until golden brown. Do not open the oven during the entire baking time, do not add more steam, the remaining steam must not escape from the oven.
Tip
If the rolled-out dough is too floured, shake off the excess flour, otherwise, the vekas would be difficult to roll. Ingredients are sufficient for 2 vekas, 30 centimeters long.
