INGREDIENTS
- 20 older rohlíky
- 500 ml milk
- 100 g butter and butter for greasing the mugs
- 5 eggs
- 4 tablespoons chopped flat-leaf parsley
- ¼ teaspoon grated nutmeg
- pepper
- 1 teaspoon salt
METHOD
- 1Cut the rohlíky into 1 cm cubes. Separate the eggs into whites and yolks. Whisk the egg whites into stiff peaks. Lightly whisk the yolks with milk. Melt the butter in a saucepan.
- 2In a bowl, mix the rohlíky, milk with yolks, melted butter, and parsley, add salt, nutmeg, and two pinches of freshly ground pepper. Stir. Gradually and carefully fold in the egg white peaks.
- 3Grease the mugs with butter and fill them two-thirds full with the dough.
- 4Place the filled mugs into a pot, pour hot water up to two-thirds of their height, bring to a boil, reduce heat to one-third, and cover with a lid. Cook for 12 minutes.
- 5Remove the mugs and let them cool briefly. Using a knife, cut around the inside edge of each dumpling and turn them out onto a cutting board. Slice the dumplings.
Tip
For this dish, you will need 6 straight-sided mugs (9–10 cm high).
