INGREDIENTS FOR CHICKEN WINGS

  • 4 Scheiben Schweineschopf ohne Knochen (ca. 600 g)
  • 400 ml Schlagobers (min. 31%)
  • 300 g Emmentaler (am Stück)
  • 150 g Zwiebeln
  • 70 g Butter
  • 100 g Champignons (aus der Dose, geschnitten)
  • 3 EL Sojasauce
  • 1 TL Currypulver
  • 1 TL Muskatnuss (frisch gerieben)

    Cut off the wingtips from the chicken wings and cut the wings at the joint.

    In a bowl, mix balsamic vinegar, sweet paprika, salt, and pepper, add the prepared wings, mix, and set aside.

    In a saucepan, heat a deeper layer of oil to 160 °C.

    Coat the wings in plain flour and shake off any excess flour. Fry them completely submerged in hot oil until golden brown, about 15 minutes. Remove the cooked wings from the oil and pat them dry on kitchen paper.

    Peel the celery stalks and cut them lengthwise into 4 pieces.

    Peel the radish and carrots and cut them into sticks the same size as the celery stalks.

    Press the garlic and mix it with sour cream and chives. Season with salt and pepper to taste.
