INGREDIENTS

  • 450 g frozen peas
  • 40 g tahini paste
  • 40 g olive oil
  • 15 g lemon juice
  • 10 g granulated sugar
  • 5 g salt

INSTRUCTIONS

    In a saucepan, combine 1 l of water and 5 g of sugar and bring to a boil. Add the peas, bring to a boil again, and cook for 2 minutes. Drain the peas and pour 80 g of the cooking water into a blender.

    Add the peas, remaining sugar, and other ingredients and blend for 2 minutes until smooth. Strain through a fine sieve.
Tip
On the plate, you can garnish with a few peas and season with a few drops of olive oil. For preparing the purée, you will need a blender. For straining, you will need a fine sieve.
