Ingredients

  • 2 bunches of radishes
  • 1 tablespoon of olive oil
  • 80 g goat cheese
  • 2 handfuls of arugula
  • 40 g pistachios
  • 1 handful of mint
  • 30 g butter
  • 1 teaspoon of honey
  • 2 cloves of garlic
  • 1 tablespoon of lemon juice
  • 1 pinch of pepper
  • 1 pinch of salt

Instructions

    Preheat the oven to 200 °C and line a baking sheet with parchment paper. Wash the radishes, trim off the greens and roots, and cut them in half. Season with salt and pepper, add oil, and mix everything together.

    Spread evenly on the baking sheet and place in the preheated oven for about 35 minutes, until the radishes are soft and roasted.

    Once done, melt the butter in a pan and continue heating it until it foams vigorously and turns slightly brown. Add the finely chopped garlic and roasted radishes to the pan and sauté for a few minutes, stirring occasionally.

    Remove them from the pan, pour the butter into a bowl, add a pinch of salt and pepper, lemon juice, and honey, and mix into a creamy dressing.

    Add arugula, goat cheese pieces, roasted radishes, chopped mint, and pistachios to a bowl. Add the dressing and mix everything together.
