INGREDIENTS

  • 300 ml milk
  • 80 g oat flour or gluten-free oat flour
  • 1 egg
  • 1 pinch of salt
  • 1 pc semi-fat quark
  • 100 g sour cream
  • 100 g yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • 1 handful blueberries or other fruit
  • 2 tablespoons honey or maple syrup
  • 20 g almond flakes
  • 1 tablespoon rapeseed oil for frying

Instructions

    In a bowl, whisk together milk, oat flour, egg, and a pinch of salt until a smooth batter forms. Let it rest for 15 minutes for the flour to absorb the liquid.

    In a pan greased with a little oil, fry thin pancakes on both sides (approx. 4 pieces in total).

    Meanwhile, prepare the cream: mix quark, sour cream, plain yogurt, vanilla extract, and powdered sugar to taste.

    Fill the finished pancakes with the prepared cream, garnish with fresh blueberries, almond flakes, and drizzle with honey or maple syrup.
