INGREDIENTS

  • 2 bunches mixed wild radishes
  • 8 eggs size M
  • 1 handful wild garlic
  • 1 handful radish microgreens
  • 8 tablespoons yogurt mayonnaise
  • 250 g frozen peas
  • Juice from 1 lemon
  • Salt
  • Freshly ground black pepper

INSTRUCTIONS

    Pour peas into boiling water and cook for 1-1.5 minutes. Then immediately cool in ice water to stop the cooking process.

    Boil eggs hard – approximately 7 minutes depending on size. Peel the cooled eggs and cut them into cubes.

    Slice the radishes. Mix with peas, egg, lemon juice, and yogurt mayonnaise.

    Season with salt and pepper. Stir in chopped wild garlic and serve sprinkled with pea microgreens.
