INGREDIENTS

  • 100 g raisins
  • 90 g rum
  • 100 g cane sugar
  • 100 g butter
  • 4 eggs
  • Lemon zest
  • Vanilla
  • 250 g all-purpose/semi-coarse flour
  • 1/2 baking powder
  • 250 g curd cheese
  • Pinch of salt
  • Coarse flour (for dusting)

    The evening before, soak the washed raisins in rum. This will wash off not only possible impurities but mainly the oily film that protects the raisins from sticking together, allowing them to absorb the alcohol better and soak well.

    Gradually beat 4 medium eggs from happy hens into the whipped butter and sugar until a fluffy mixture forms.

    Add vanilla seeds and lemon zest. I always zest an untreated/organic lemon before using it for juice and store the zest in the freezer. It's an absolute game-changer! Highly recommend it.

    Then add the mixture of flour, baking powder and salt, soft curd cheese, and finally the drained fragrant raisins, mix into a smooth dough.

    Pour the dough into a greased mold dusted with coarse flour and bake for about 50 minutes at 170°C.
