INGREDIENTS
- 4 ostrich steaks (approx. 180 g each)
- 200 g mixed mushrooms (shimeji, shiitake, oyster mushrooms)
- 1 red bell pepper
- 1 zucchini
- 4 shallots
- 1 tablespoon butter
- 2 tablespoons olive oil
- 1 teaspoon cane sugar
- Handful of radish microgreens
- ½ teaspoon ground caraway
- Salt (use for the base and for the sauce)
- Freshly ground black pepper (use for the base and for the sauce)
INGREDIENTS FOR THE SAUCE
- 200 ml dry red wine
- 200 ml beef broth
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 teaspoon cornstarch (Solamyl)
INSTRUCTIONS
- 1Remove the steaks from the refrigerator at least 30 minutes beforehand. Season with salt and pepper.
- 2Cut the bell pepper and zucchini into wider strips. Heat olive oil in a pan and sauté the vegetables in the hot pan until golden. Sauté quickly for only a few minutes; the vegetables must remain crispy. Season with salt and pepper. Peel the shallots and cut them in half. Heat 1 tablespoon of butter in a pan, add the shallots, and sprinkle with sugar. Let them caramelize over low heat, stirring occasionally. Set aside. In the same pan, heat the second tablespoon of butter and sauté the mushrooms until soft. Season with salt, pepper, and add caraway.
- 3In a small saucepan, combine the wine with the broth, reduce by half, add cornstarch (Solamyl) and cook for a little longer until the sauce thickens. Stir in mustard, honey, and season with salt and pepper.
- 4Now prepare the steaks. Heat a pan to maximum and sear the meat on each side for approximately 2-3 minutes (medium-rare doneness). Place the meat in aluminum foil, add a tablespoon of butter, and wrap it up. Let it rest for five minutes. This will help the meat retain all its juices. Then slice the meat into thin pieces. Season with salt and pepper.
- 5Spread the vegetables and mushrooms on a plate, serve with the sliced steak and sauce. Garnish with microgreens.
