INGREDIENTS

  • 1 large yellow onion (approx. 100 g)
  • 2 large zucchinis (approx. 600 g)
  • 1 large red bell pepper (approx. 120 g)
  • 1 package cherry tomatoes (250 g)
  • 1 tablespoon dried oregano
  • 2 tablespoons olive oil
  • 1 tablespoon dried garlic
  • 250 g mozzarella
  • 1 handful fresh basil

INSTRUCTIONS

    First, preheat the oven to 200–205 °C and prepare a baking dish measuring 25 cm × 30 cm. Peel the onion and, along with the zucchini and bell pepper, cut them into larger cubes. Halve the cherry tomatoes. Place the prepared vegetables into the baking dish, add oregano, 2 tablespoons of olive oil, dried garlic, salt, and pepper, and mix.

    Place the baking dish into the preheated oven at 200–205 °C and bake for 20–25 minutes.

    After the time has elapsed, remove the baking dish from the oven, coarsely grate mozzarella on top, and return the baking dish to the oven. Bake for 10–15 minutes at 200–205 °C.

    After baking, remove the baking dish from the oven and divide the dish into desired portions. Coarsely chop the basil, sprinkle it over each portion, and serve.
