INGREDIENTS

  • 1 chicken breast (approx. 150 g)
  • 3 tablespoons olive oil
  • 30 g butter (softened)
  • 6 slices whole wheat toast bread (6× approx. 25 g)
  • 50 g cheddar
  • 1 small tomato (approx. 50 g)
  • 50 g romaine lettuce
  • 100 g chicken ham (min. 90 % meat)
  • Salt (for meat and dressing)
  • Pepper (for meat and dressing)

INGREDIENTS FOR DRESSING

  • 100 g Greek-style yogurt (0 % fat)
  • 1 tablespoon tomato paste
  • 1 teaspoon ground smoked paprika (optional)

INSTRUCTIONS

    First, bake the chicken breast. Preheat the oven to 180–185 °C and prepare an oven-safe pan. Clean the chicken, season with salt and pepper, and heat 3 tablespoons of olive oil in the prepared pan. Then add the chicken to the pan and sear it for 4–5 minutes on each side over medium heat. Subsequently, transfer the pan to the preheated oven and bake for 4–6 minutes at 180–185 °C.

    Meanwhile, prepare a smaller baking sheet (20 cm × 30 cm), butter all slices of toast bread, and arrange them on the prepared baking sheet.

    After 4–6 minutes of baking, add the baking sheet with toast bread to the oven with the chicken and bake everything for another 6–7 minutes. Meanwhile, finely grate the cheddar, slice the tomato into thin rounds, and tear the lettuce into larger pieces.

    After the specified time, sprinkle the grated cheddar over the chicken breasts, return them to the oven, and bake everything for another 2 minutes.

    Meanwhile, mix all the listed ingredients for the dressing in a bowl.

    After baking, remove the chicken and the baking sheet with toast bread from the oven. Let the chicken breasts cool slightly, then slice them into thin pieces.

    Next, assemble both sandwiches. Place 1 baked slice of bread on a work surface and spread it with the prepared dressing. Then, add about ¼ of the torn lettuce, ¼ of the sliced tomato, and ½ of the roasted chicken. Cover everything with another slice of bread, spread it again with dressing, and top with another ¼ of the lettuce, ¼ of the tomato, and ½ of the chicken ham. Finally, cover everything with a third slice of bread. Assemble the second sandwich in the same way using the remaining ingredients.
