INGREDIENTS FOR MEATBALLS
- 400 g ground turkey
- 2 teaspoons Provençal spices
- 20 g fresh chives (finely chopped)
- ½ large red bell pepper (finely chopped)
- 1 large yellow onion (finely chopped)
- 1 tablespoon olive oil
- Salt
- Pepper
INGREDIENTS FOR SAUCE
- 1 tablespoon tomato paste
- 400 g canned chopped tomatoes
- 1 handful fresh basil (finely chopped)
- Salt
- Pepper
INGREDIENTS FOR COUSCOUS
- 100 g dry couscous
- Juice of ½ medium lemon
- 180 ml water (boiling)
- Salt
INSTRUCTIONS
- 1In a medium bowl, mix the ground turkey with spices and chopped vegetables, then season with salt and pepper. Form 16 meatballs from the mixture.
- 2In a large pan, heat oil over medium heat and brown the meatballs until golden (approx. 4 minutes). Then remove them, add tomato paste to the pan and sauté for approx. 1 minute over medium to high heat, stirring constantly. Pour in the tomatoes, season with salt and pepper, mix, and simmer for 1–2 minutes. Then add the meatballs, reduce the heat to low, and cook for another approx. 15 minutes.
- 3Meanwhile, place couscous in a small bowl, pour boiling water over it, and cover with a plate. Once the meatballs are done, uncover the couscous, season with salt, pepper, and lemon juice, and stir.
- 4Serve the meatballs with couscous and basil.
