INGREDIENTS FOR THE BATTER
- 200 g wholemeal spelt plain flour
- 1 ripe banana (peeled, approx. 80 g after peeling)
- 2 tablespoons brown cane sugar
- 1 teaspoon baking powder
- 2 medium-sized eggs
- 240 ml skimmed cow's milk
INGREDIENTS FOR THE FILLING
- 200 g fresh strawberries
- 1 handful fresh mint
- 2 tablespoons liquid honey
INSTRUCTIONS
- 1First, prepare the filling. Dice the strawberries into small pieces, roughly chop the mint, and place both in a bowl together with 2 tablespoons of honey. Mix and chill in the refrigerator.
- 2Place all ingredients for the batter into a tall container and blend until smooth using an immersion blender. If the batter is too thick, add 50–100 ml of water as needed.
- 3Next, heat a large non-stick pan (⌀ 22 cm). Pour the prepared batter in portions onto the pan and cook for 1–2 minutes on each side. This will yield approximately 6 pancakes.
- 4Fill the cooked pancakes with the chilled strawberry mixture and serve.
