INGREDIENTS
- 2 tablespoons olive oil
- 350 g beef sirloin or tenderloin
- 1 medium red onion
- 1 orange bell pepper
- 1 green bell pepper
- 1 red bell pepper
- 2 cloves garlic
- 1 tablespoon lime juice
- 3 tablespoons spicy tomato sauce or salsa
- 4 large wheat tortillas
- 1/2 cup grated cheddar
- 1/2 cup grated gouda cheese
- fresh cilantro
- Ground black pepper
- Salt
INSTRUCTIONS
- 1Heat 1 tablespoon of oil in a pan over medium-high heat. Season the steak with salt and pepper and sear for about 3-4 minutes on each side, depending on desired doneness. Transfer the cooked meat to a cutting board, cover with aluminum foil, and let rest for 10 minutes. Then slice into thin strips.
- 2Add the remaining tablespoon of oil to the pan. Add the onion, both bell peppers, and sauté over medium heat for about 6 minutes, until softened and lightly golden. Add garlic, cilantro, lime juice, and spicy tomato sauce. Mix everything well and let simmer briefly, about 1 minute.
- 3Sprinkle a quarter of the cheddar onto each tortilla, add some meat slices, vegetable mixture, and a little gouda cheese. Fold the tortillas in half.
- 4Heat a clean pan over medium heat. Cook the quesadillas on both sides until golden and the cheese is melted, about 2-3 minutes per side.
- 5Cut the finished quesadillas into triangles. Serve with salsa.
