INGREDIENTS

  • 2 tablespoons olive oil
  • 350 g beef sirloin or tenderloin
  • 1 medium red onion
  • 1 orange bell pepper
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 cloves garlic
  • 1 tablespoon lime juice
  • 3 tablespoons spicy tomato sauce or salsa
  • 4 large wheat tortillas
  • 1/2 cup grated cheddar
  • 1/2 cup grated gouda cheese
  • fresh cilantro
  • Ground black pepper
  • Salt

INSTRUCTIONS

    Heat 1 tablespoon of oil in a pan over medium-high heat. Season the steak with salt and pepper and sear for about 3-4 minutes on each side, depending on desired doneness. Transfer the cooked meat to a cutting board, cover with aluminum foil, and let rest for 10 minutes. Then slice into thin strips.

    Add the remaining tablespoon of oil to the pan. Add the onion, both bell peppers, and sauté over medium heat for about 6 minutes, until softened and lightly golden. Add garlic, cilantro, lime juice, and spicy tomato sauce. Mix everything well and let simmer briefly, about 1 minute.

    Sprinkle a quarter of the cheddar onto each tortilla, add some meat slices, vegetable mixture, and a little gouda cheese. Fold the tortillas in half.

    Heat a clean pan over medium heat. Cook the quesadillas on both sides until golden and the cheese is melted, about 2-3 minutes per side.

    Cut the finished quesadillas into triangles. Serve with salsa.
