INGREDIENTS FOR THE SALAD

  • 2 eggs
  • 50 g bacon
  • 1 chicken breast
  • 1 romaine lettuce
  • 150 g tomatoes
  • 1 shallot
  • 1 small avocado or half of a larger one
  • 50 g blue cheese

INGREDIENTS FOR DRESSING 1

  • 1 tablespoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Freshly ground pepper
  • Salt

METHOD

    Place eggs in water, bring to a boil, and cook for 6-8 minutes. Then transfer the eggs to cold water, let them cool, and peel.

    Cut bacon into small cubes and fry in a pan until golden. Remove it from the pan, leave the rendered fat, and fry the chicken breast on it, seasoning with salt. Fry the breast on all sides over medium heat until cooked through. Then let it rest for a few minutes and cut into pieces.

    For the dressing, mix the listed ingredients and season with salt and ground pepper.

    Wash and cut romaine lettuce into strips, tomatoes into smaller pieces, shallots into strips, pour dressing over and mix. Peel and pit the avocado and cut into thicker strips or cubes.

    Place lettuce, halved eggs, chicken pieces, avocado, and bacon into a bowl. Sprinkle with cheese pieces and serve.
