INGREDIENTS
- 150 g short-grain rice
- 400 ml coconut milk
- 4 tablespoons coconut-almond butter
- 1 handful fresh blueberries
- Fruit for garnish
- Crispy coconut chips

METHOD
- 1Rinse the rice thoroughly to remove starch. Rinse until the water runs clear. Then pour it into a pot and cover with coconut milk.
- 2Cook for approximately 15 minutes until soft. Stir constantly and add a little regular milk if needed. Let the rice cool.
- 3Then divide into bowls and add sliced apricots, blueberries, coconut chips, and especially coconut almond butter, which will give the entire rice pudding the right flavor. Thanks to this, there is no need to add any sugar, as coconut is sweet enough. If necessary, however, the rice can be flavored with honey or maple syrup, for example.
