INGREDIENTS
- 8 slices of stale bread (preferably white, ciabatta, or French baguette)
- 200 g crumbled feta cheese
- 100 g grated cheese (e.g., mozzarella or cheddar)
- 200 g cherry tomatoes, halved
- 100 g black olives, pitted and sliced
- 1 small zucchini, thinly sliced
- 1 red onion, finely chopped
- 2 cloves garlic, finely minced
- 6 eggs
- 300 ml milk or cream
- 2 tablespoons olive oil
- 1 tablespoon dried oregano 16754
- Salt
- Pepper
INSTRUCTIONS
- 1Cut the bread into cubes (about 2 cm large) and set aside.
- 2Heat olive oil in a pan over medium heat. Add the chopped onion and garlic and sauté until the onion softens and begins to turn golden. Add the zucchini and sauté for a few more minutes until slightly tender. Remove the pan from the heat and let the mixture cool.
- 3In a large bowl, combine the cubed bread, cherry tomatoes, olives, crumbled feta, and grated cheese.
- 4Add the sautéed onion and zucchini mixture, dried oregano (or Herbes de Provence), salt, and pepper.
- 5Pour the egg mixture over the bread mixture and mix thoroughly so that all ingredients are combined and the bread soaks up the egg mixture.
- 6In another bowl, whisk the eggs with milk or cream. Season the mixture well with salt and pepper.
- 7Let the mixture rest for about 10 minutes so that the bread can soak well.
- 8Preheat the oven to 180°C. Transfer the prepared mixture into a greased baking dish (approx. 20x30 cm). Bake in the preheated oven for 35-40 minutes, or until the strata is golden brown and crispy.
- 9Let the strata rest for 5-10 minutes after removing it from the oven.
