INGREDIENTS
- 8 pcs mini burger buns
- 2 cans (420 g white beans in lightly salted brine)
- 2 pcs egg
- 5 tablespoons all-purpose flour
- 2 large red onions
- 6 cloves garlic
- 2 tablespoons Greek gyros seasoning
- 400 g white Greek yogurt
- 1 tablespoon dried oregano
- Juice from half a lemon
- 250 g yellow cherry tomatoes
- 100 g feta cheese
- 1 handful arugula
- Olive oil
- Salt
- Freshly ground black pepper
INSTRUCTIONS
- 1First, prepare the dip. Mix the yogurt with oregano, crushed garlic, lemon juice, season with salt and pepper, and drizzle with olive oil. Chill in the refrigerator.
- 2Sauté finely chopped red onion and 4 cloves of crushed garlic in olive oil. Add drained beans and gyros seasoning. Mash the beans with a potato masher (or a fork), mix everything, and let it sauté over low heat for 10 minutes. Let it cool down. Season with salt and pepper if needed.
- 3Add egg, flour, and mix. Form 8 balls, coat them in flour, and gently press them to create a burger shape.
- 4Then grill them until golden brown, or you can fry them in a pan.
- 5While the patties are still warm, place feta cheese on top to melt. Toast the buns until crispy. On each bun, place a little arugula, sliced tomatoes, onion rings, the bean burger, and the dip.
