INGREDIENTS

  • 500 g razor clams
  • 2 fresh red chili peppers
  • 3 cloves garlic
  • 3 sprigs fresh thyme
  • Olive oil
  • 1-2 lemons
  • 2 slices sourdough bread

INSTRUCTIONS

    Turn on the oven to top and bottom heat and set to 220 °C.

    Slice the garlic and chilies and separate the thyme into individual sprigs.

    Wash the razor clams under cold running water and check that none of them are open; set aside any open ones and do not use them further. Dry them and arrange them on a baking sheet with parchment paper. Drizzle with olive oil, sprinkle with garlic and chilies.

    Bake until all the razor clams open. This takes approximately 5 minutes. Transfer the baked clams to plates, pour over the sauce from the baking sheet, and drizzle with lemon juice and olive oil. Serve with baked sourdough bread.
