INGREDIENTS

  • 250 g ricotta
  • 150 g all-purpose flour
  • 3 eggs size M
  • 150 ml milk
  • 1 baking powder with cream of tartar (10 g)
  • 50 g granulated cane sugar
  • 1 vanilla sugar
  • 1 teaspoon ground cinnamon
  • Ghee for frying
  • 125 g blueberries
  • Powdered sugar for sprinkling (optional)

INSTRUCTIONS

    Separate egg yolks from whites. Whisk the egg whites until stiff.

    Beat the egg yolks with sugar and add flour mixed with baking powder and cinnamon.

    Add ricotta, pour in milk, and whisk together. Finally, carefully fold in the whipped egg whites.

    Fry in ghee over medium heat until the pancakes are golden and cooked through.

    Serve with blueberries, sprinkled with powdered sugar.
