INGREDIENTS
- 100 g shredded coconut
- 25 g coconut oil
- 40 g liquid honey
- 80 g dark chocolate (70%)
INSTRUCTIONS
- 1Prepare a blender, put shredded coconut, 20 g of coconut oil and honey into it and blend until the ingredients combine. Then take ice cube molds, press the blended mixture into them and put them in the freezer for at least 30 minutes.
- 2Once the coconut mixture hardens, melt the chocolate over a double boiler: Take a pot and a glass or stainless steel bowl that can be placed into the pot without touching its bottom. Pour a small amount of water into the pot and bring to a gentle boil; meanwhile, break the chocolate into the bowl and add 5 g of coconut oil. Once the water in the pot starts to boil, reduce the heat to low, carefully place the bowl with chocolate and oil into the pot so that it is approximately 1 cm above the water level, and let the chocolate slowly melt over the hot steam, stirring constantly (this will take 3–4 minutes).
- 3Next, take the coconut cubes out of the freezer, remove them from the molds, and coat them in the melted chocolate. After coating, let them set for another 1–2 minutes and then serve.
