INGREDIENTS

  • 1 onion
  • 1 teaspoon ghee
  • 250 g baby spinach
  • 2 potatoes
  • 1 l vegetable broth
  • 2 cloves garlic
  • 100 ml cooking cream
  • Pinch of ground nutmeg
  • Salt
  • Pepper

METHOD

    Peel and finely chop the onion and garlic. Also peel the potatoes and cut them into cubes. Wash and dry the spinach.

    Sauté the onion and garlic in a teaspoon of ghee until translucent, then add the potatoes and vegetable broth. Season with salt and cook over low heat until the potatoes are tender.

    Pour the soup into a blender, add the baby spinach, and blend until a smooth cream. Add the cream and season with pepper and nutmeg.
