Ingredients
- 150 g Greek yogurt 10% fat
- 200 g red beans in brine
- Juice from ½ lime
- 100 g cherry tomatoes
- 1 teaspoon cane sugar
- 80 g canned corn
- ½ teaspoon ground chili
- 1 pc red bell pepper
- ½ teaspoon dried garlic
- 1 pc yellow bell pepper
- 1 teaspoon dried onion
- 1 small avocado
- ½ teaspoon salt
- ½ - 1 pc romaine lettuce
- ½ teaspoon ground red paprika
- Handful of fresh coriander
- 100 g fresh cheese
Instructions
- 1For the dressing, mix all ingredients and set aside in the fridge.
- 2Drain and rinse the beans. Halve the tomatoes. Dice the bell peppers and avocado, cut the lettuce into strips. Finely chop the coriander.
- 3Serving: Place the lettuce at the bottom of a bowl, drizzle with chipotle dressing, sprinkle with coriander. Layer the vegetables on top, sprinkle with shredded cheese, and drizzle again with chipotle dressing.
