Ingredients
- 2 eggs
- 150 g kefir
- 40 g ghee
- 80 g cane sugar
- 1 teaspoon vanilla extract
- 210 g spelt semi-coarse flour
- 6 g baking powder
- 6 g baking soda
- 110 g carrots
For the cream
- 225 g firm quark
- 75 g whipping cream
- 45 g powdered sugar
- 20 g dark chocolate
Instructions
- 1Preheat the oven to top and bottom heat and set to 170 °C.
- 2Clean the carrots and grate them on a fine grater. Crack the whole eggs into a bowl, add the carrots and other ingredients. Mix with a wooden spoon into a smooth batter, which you then fill into cupcake liners. For a cupcake liner base size of 5 cm, the batter yields 12 pieces.
- 3Bake in the preheated oven for 25-30 minutes. Check for doneness with a skewer. Remove them to a wire rack and let cool.
- 4Meanwhile, whip the quark with cream and sugar and chill in the refrigerator. Using a piping bag with a wide round pastry tip, create ghosts (just like indiánky).
- 5Melt the chocolate in a bain-marie, fill a piping bag with it, cut off just a small piece of the tip to create a small opening. Squeeze small chocolate balls onto food film, which will be used for the ghosts' eyes. Let them solidify, carefully peel them off, and decorate the cupcakes with them.
