- 200 g parsley root
- 100 ml coconut milk

INSTRUCTIONS
- 1Cut potatoes and parsley root into equally sized cubes, place in a saucepan, cover with boiling water, salt, and cook until tender under a lid.
- 2Once the vegetables are tender, drain most of the water, leaving a small amount with the vegetables.
