INGREDIENTS
- 500 g shrimp (can use raw or pre-cooked)
- 6 cloves garlic
- 1 small red chili pepper (optional, to taste)
- 125 ml extra virgin olive oil
- Salt to taste
- Freshly ground black pepper to taste
- Fresh parsley (for garnish)
INSTRUCTIONS
- 1If using raw shrimp, peel them (leave the tail on for easier handling) and remove the vein. If using pre-cooked shrimp, simply rinse and pat them dry.
- 2Peel the garlic and slice it thinly. Slice the chili pepper into thin strips (use less or omit if you don't want the shrimp to be too spicy).
- 3In a large pan or small saucepan, heat the olive oil over medium heat. Add the garlic and chili pepper and sauté until the garlic begins to turn golden. Watch carefully to prevent the garlic from burning.
- 4Once the garlic is golden, add the shrimp, salt, and pepper. If using raw shrimp, cook them until they become firm and pink, which should take about 2-3 minutes per side. If using pre-cooked shrimp, simply heat them through in the garlic oil, which should take about 1 minute per side.
- 5Serve immediately, garnished with fresh parsley.
