INGREDIENTS

  • 100 g bread, at least one day old
  • 200 g ripe tomatoes
  • 50 g peeled red onion
  • 50 ml red wine vinegar
  • 100 ml olive oil + 1 tbsp olive oil for seasoning
  • 8–10 basil leaves
  • freshly ground pepper
  • salt

INSTRUCTIONS

    Preheat the oven to 190 °C.

    Trim the crusts from the bread and cut it into 1.5 cm cubes. Place in a bowl, season with salt and pepper, pour in olive oil, mix, and spread onto a baking sheet. Place in the preheated oven and bake for 7 minutes. Let cool.

    Cut the tomatoes into larger pieces. Finely chop the onion. Tear the basil.

    In a bowl, combine the chopped tomatoes, onion, and basil. Season with salt and pepper. Add the toasted bread, wine vinegar, and olive oil. Mix the salad and let it rest for 1 hour at room temperature. Mix before serving.
