INGREDIENTS

  • 1 kg smaller zucchinis (4 pcs)
  • 300 g minced turkey meat
  • 2 cloves garlic (finely grated)
  • 4 tablespoons tomato paste
  • 1 egg size M
  • 1 handful finely chopped fresh basil (you can substitute with 2 teaspoons dried)
  • 50 g Parmesan (finely grated)
  • 50 g sun-dried tomatoes (finely chopped)
  • 1 tablespoon dried oregano
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 185–190 °C, prepare a baking sheet (30 cm × 40 cm) and line it with baking paper.

    Halve the zucchinis and scoop out the inner pulp with a spoon. Cut the pulp into small pieces and set it aside. Salt the hollowed-out zucchini and also set it aside.

    In a large bowl, combine the minced meat, zucchini pulp, finely grated garlic cloves, tomato paste, egg, basil, 30 g Parmesan, finely chopped sun-dried tomatoes, salt, pepper, and oregano, and mix everything together.

    Now take the salted zucchini and dry the hollowed-out part with a paper towel. Fill the prepared zucchinis with the meat mixture and place them on the baking sheet. Once all zucchinis are filled, sprinkle the surface with the remaining Parmesan.

    Finally, place the baking sheet in the preheated oven and bake the zucchinis for 40–45 minutes at 185–190 °C. After baking, remove the zucchinis from the oven, divide into individual portions, and serve.
