Instructions
- 1Rinse the quinoa thoroughly with warm water. Salt 600 ml of water with 1 teaspoon of salt, bring to a boil, and add the quinoa. Bring to a boil, reduce heat to minimum, and cook for 15 minutes. Pour the cooked quinoa into a bowl and let it cool.
- 2Finely chop the onion and garlic. Cut the tomatoes and cucumbers into 2 cm cubes. Halve the avocados, remove the pit, scoop out the flesh with a spoon, and cut it into 2 cm cubes.
- 3In a bowl, mix the tomatoes, cucumbers, and red onion. Add olive oil, lemon juice, and wine vinegar and mix. Add avocado, garlic, herbs, and cooled quinoa. Mix and season with salt and pepper to taste.
