INGREDIENTS FOR SALAD

  • 4 eggs
  • 500 g green asparagus
  • 280 g whole wheat couscous
  • 1 punnet mixed salad leaves
  • Bunch of radishes
  • Salt
  • Pepper
  • Sunflower seeds

INGREDIENTS FOR DRESSING

  • 40 ml olive oil
  • 40 g honey
  • 40 g coarse-grain mustard

DRESSING INSTRUCTIONS

    Mix olive oil, mustard, honey, and 1 tablespoon of water.

SALAD INSTRUCTIONS

    Place eggs in boiling water and cook for 9 minutes. Transfer cooked eggs to cold water.

    Pour 300 ml of hot water over the couscous, salt it, and let it rest for 5 minutes.

    Wash the asparagus stalks and break off the woody parts. It will be easy. Bend the stalk at the bottom, and it will break off by itself where it is no longer woody. Cook it in salted water for 2 - 3 minutes. Cooking time depends on the thickness of the stalks. Transfer the cooked asparagus to cold water to stop the cooking process.

    Slice the radishes thinly.

    Mix the couscous with the leafy greens and radishes. Divide into plates. Top with asparagus and halved eggs. Sprinkle with sunflower seeds and drizzle with the prepared dressing.
