Ingredients
- 3 pcs eggs
- 80 g cane sugar
- 110 ml milk
- 110 g plain yogurt
- 150 g whole-grain spelt flour
- 5 g baking powder
- 5 g baking soda
- 20 g cocoa
- 50 g butter
- 10 g coarse flour
- 2 g salt
Instructions
- 1Grease the Bundt cake pan with butter and dust with coarse flour. If you have a silicone mold, skip this step.
- 2Preheat the oven to 170 °C.
- 3Separate the eggs into whites and yolks. Whisk the egg whites with a pinch of salt until stiff peaks form. Whisk the egg yolks with sugar until light and frothy. Add milk and yogurt and whisk again.
- 4Sift the flour with baking powder, baking soda, and cocoa and mix with the wet mixture. Pour in the melted butter, mix again. Finally, gently fold in the egg white snow. Do not whisk the batter anymore, just carefully fold it with a spatula.
- 5Pour the batter into the pan and bake for 35-40 minutes. Check if the Bundt cake is baked through with a skewer. If the skewer comes out with batter stuck to it, extend baking by 5 minutes.
- 6After one minute, turn out the baked Bundt cake onto a wire rack and let it cool.
