  • 4 pcs tortillas
  • 8 pcs eggs
  • 150 g cheese
  • 1 avocado
  • 1 shallot
  • Fresh leaf spinach

    Scramble the eggs in a pan with a little salt and pepper. Dice the avocado and shallot, and grate the cheese.

    Place a tortilla on a cutting board. Take a knife and make a cut from the center of the tortilla down to the edge.

    Imagine the tortilla is divided into four parts (in half and each half again in half). You will place a different ingredient in each part.

    Place scrambled eggs on the first part to the left of the cut. On the next part, place half a sliced avocado and a handful of chopped shallot. The next part of the tortilla will have cheese, and on the last part, place a handful of baby spinach.

    Now you can start wrapping. First, fold the egg part over the avocado, then fold both parts over the cheddar, and finish the wrap by folding it over the spinach part. For a clearer demonstration, watch the video above.

    Dry-fry the wrapped tortilla on both sides in a pan, contact grill, or toaster.
