INSTRUCTIONS
- 1Debone the chicken breasts and cut them horizontally. Mix olive oil with curry powder and spread the prepared mixture on all sides of the breasts. If the curry powder mixture already contains salt, do not add more. Preheat the oven to 200 degrees Celsius - preferably grill function.
- 2Sear the prepared meat in a hot pan. Place it on a baking dish lined with parchment paper. Pour coconut milk over it and bake for 25-30 minutes in the oven. Slice the mozzarella and place it on the meat after 20 minutes. Then bake for another 5 to 10 minutes.
- 3Meanwhile, peel and finely chop the onion, and slice the garlic. Break the cauliflower into florets and remove the tough stems. Finely chop the florets; the result will resemble rice. Sauté the onion in 1 tablespoon of olive oil until golden, then add the garlic and let it become fragrant and soften. Add the cauliflower to the pan and sauté for about 5 minutes until tender. Season with salt and pepper. Finally, drizzle with lime juice and add chopped herbs. Serve with roasted chicken and drizzled with the coconut pan juices.
