BUN BO NAM BO AND DRESSING
- 400 g beef
- 1 package bun noodles
- mung bean sprouts
- Vietnamese mint
- coriander
- perilla
- 4 tablespoons fish sauce (2 tablespoons for meat, 2 tablespoons for dressing)
- 3-4 cloves garlic (2 for meat, 1-2 for dressing)
- 1 lemongrass stalk
- 1 tablespoon oil
- 1 carrot
- 1/2 cucumber
- peanuts
- pepper
- salt
- 2 tablespoons lime juice
- 2 tablespoons cane sugar
- 1 chili pepper
INSTRUCTIONS
- 1Slice the meat as thinly as possible, add 2 tablespoons of fish sauce, a pinch of salt, grated garlic, finely chopped lemongrass, one tablespoon of oil, a pinch of pepper, and let it marinate for half an hour to an hour.
- 2Slice all vegetables and herbs into thin strips. Roast the peanuts in a pan and crush them in a mortar or with a rolling pin.
- 3Cook the bún noodles (according to package instructions). After cooking, rinse them with cold water to prevent sticking, and then again with hot water.
- 4Quickly sauté the meat in a hot pan and season to taste.
- 5Place bún noodles, vegetables, mung bean sprouts, herbs, and meat into a large bowl and pour the dressing over everything. Finally, sprinkle with peanuts.
DRESSING INSTRUCTIONS
- 1Mix all ingredients with 4 tablespoons of water.
