INGREDIENTS FOR THE DOUGH

  • 220 g whole spelt flour
  • 1 egg
  • 60 g finely ground walnuts
  • 100 g honey
  • 60 g butter
  • 1 teaspoon gingerbread spice
  • ½ teaspoon baking soda

INGREDIENTS FOR FINISHING

  • 200 g dates
  • 100 ml condensed milk
  • Ground walnuts

  • Cling film

INSTRUCTIONS

    Prepare the dough the day before. On a work surface, mix the dry ingredients, make a well, and add the egg, honey, and butter. Knead everything by hand into a compact dough, then wrap it in cling film. Store it in the refrigerator overnight. If you don't have much time, let it rest for at least 1 hour.

    Preheat the oven to 170 °C. Roll out the dough into a 5-millimeter thick sheet, transfer it to a baking sheet lined with baking paper, and bake for 12-13 minutes.

    Soak the dates for 1 hour. Then drain the water and blend the dates into a paste.

    Crumble the cooled sheet by hand or using a mixer. Set aside approximately 3 tablespoons and mix with ground walnuts. This will create the coating mixture for the balls. Mix the rest with the date paste and condensed milk. Form balls with a diameter of 2.5 cm from the resulting mixture and coat them in the prepared coating mixture.
