- 1 trout weighing 450 g
- 70 g butter
- 2 sprigs of thyme
- 1 sprig of rosemary
- freshly ground pepper
- salt

- The best choice for fish cuisine are light and less aromatic wines. Choose from white and rosé.
Instructions
- 1Preheat the oven to 180 °C. Cut the butter into slices.
- 2Trim the fins off the fish with scissors. Wash it under cold running water and carefully pat it dry. Then season it with salt and pepper on all sides, including the inside.
- 3Place the herbs and 20 g of butter inside the fish. Place baking paper on a baking sheet, then 20 g of butter on top of it, and then the prepared fish. Top the fish with the remaining butter and place the baking sheet with the fish into the preheated oven. Bake for 15 minutes. Serve the fish immediately, drizzled with the butter it was baked in.
