INGREDIENTS

  • fresh strawberries (20–30 pcs)
  • 1 kg soft full-fat quark
  • 600 g coarse flour and flour for dusting the dough
  • 120 g melted butter
  • 60 g powdered sugar
  • 4 eggs
  • 4–6 tablespoons sour cream
  • pinch of salt

Instructions

    Place the quark in a large bowl, add a pinch of salt, eggs, and flour, and knead into a smooth dough. The dough must not be too thin, so add more flour as needed. Let the dough rest in the refrigerator for 15 minutes.

    Bring salted water to a boil in a large pot. Hull, wash, and dry the strawberries.

    On a floured board or work surface, roll the dough into a 4 cm thick cylinder. Cut it into equally sized pieces, which you then flatten into discs. Place a strawberry in the center of each disc, wrap it, and carefully shape it into a dumpling. Immediately place the dumplings into boiling water and cook for 6 minutes.

    Remove the dumplings from the water with a flat sieve or slotted spoon, place them on a plate, pour sour cream over them, sprinkle with powdered sugar, and drizzle with melted butter.
Tip
You must wrap the dumplings very carefully; there must not be any gaps, otherwise the dough would tear during cooking and the strawberries would roll out into the water. Do not cook the dumplings for too long; the strawberries inside should remain firm. If you cook the dumplings for too long, the strawberries would overcook. You can also sprinkle the dumplings with grated hard quark or pour good quality plain yogurt over them.
