PESTO
- 1 large bunch of carrot or parsley tops
- 50 g walnuts or pine nuts
- 1 clove of garlic
- 50 g grated Parmesan
- Pinch of salt
- Pinch of ground black pepper
- Extra virgin olive oil
Instructions
- 1Thoroughly wash and dry the vegetable tops (carrot or parsley) and remove tough stems. Roughly chop the leaves.
- 2You can briefly toast the nuts (walnuts or pine nuts) in a dry pan for a more intense flavor. Peel the garlic.
- 3Place all ingredients (tops, nuts, garlic, Parmesan) into a blender or mortar. Gradually add olive oil and blend or crush until the desired paste consistency is achieved.
- 4Season the finished pesto with salt and pepper. If it's too thick, add a little more oil. Serve with pasta or on a baguette.
